Make your own ice cream sandwiches

Did you know that July is National Ice Cream Month?  It's no accident that July is also my birth month... just sayin'.  Now that you're hungry and craving the stuff, here are a few sweet treats to keep the heat at bay:

• Two ingredient ice cream -- no ice cream machine needed!

• Coconut cookie ice cream sandwiches -- use any flavor of ice cream for the filling. 

• Make your own ice cream sandwiches using any one of these cookies and the ice cream or fro-yo of your choice: 
• Chewy sugar cookies 
• Chocolate hazelnut smooches - omit the Hershey Kisses for flatter sandwich-friendly cookies 
• Homemade Oreos - omit the cream filling for an ice cream Oreo 
• Oatmeal raisin cookies 
• Orange creamsicle cookies 
• Snickerdoodle cookies 
• Very peanut butter cookies 
• Chewy chocolate chip cookies 
• Double chocolate cookies 
• Mint chocolate chip cookies

• One ingredient frozen banana custard - fresh, healthy, and dairy-free, too!  If it feels too healthy, swirl in some peanut butter or top with chocolate chips :)
