Easy strawberry cheesecake ice cream - no machine required!


Happy July, friends!

Despite my love for snow, Christmas, and other trademark December happenings, July has always been my most favorite month for so many reasons.

July was and still is the only month guaranteed to be school-free.  Though I haven't been in school for nearly 8 (!) years, I still think of July as part of summer vacation.  So does Mr. Matt the teacher, who is home for most of the day and enjoying a well-deserved break from the classroom.  The only real problem is that I really struggle to find the motivation to go to work, knowing he's home relaxing.  Jealous much?  Just a bit.

Work duties aside, July is also awesome because it's filled with all the fun things a kid/big kid could imagine: Pool time! Vacations! Picnics! Fireworks! River trips!  And...

File this under "Least Surprising Things I've Ever Said."

To be fair, I love our routine.  It brings me comfort and happiness and a welcome sense of familiarity that the rest of the day sometimes usually lacks.  From my morning GMA ritual to Matt's 3:15 phone calls signaling that he's on his way from school to practice, we've learned what it takes for us to be a functional and happy "us."

Grandma's Oreo dessert


Whew.  It's Wednesday, right?  Right.  What a fabulous weekend that was.  Thank you for all of the birthday wishes!  29 has gotten off to a busy and fun start.  I ran, ate (obviously), celebrated with friends and family, soaked up the sunshine in my beloved city, and even snuck in a day off at the country home (a.k.a. my parents') on Monday.

Does anyone else feel like the longer you're away the harder it is to return to the everyday routine?

Yesterday, I punched in (and out), hit the gym, made dinner, prepped lunches for the week, and tidied up the aftermath of the post-weekend-away mess.  Just when I thought it the everyday routine was back, I opened the freezer and spotted the last remaining trace of my birthday celebration.  Squee!

At last, dinner... and yes, the brownie batter doughnut from Dunkin' is sooooo worth the hype!  The filling is legit brownie batter, even with that signature slightly grainy texture.  Amaze.



And dessert... Razzy Fresh.  Coconut, cookies & cream, and French vanilla with some cookie dough bits and a single gummy worm.  For the win.


Gulp.  At least I started my day off with a run.  Overall, not a bad day.  Not a bad day at all :)

Fast Friday: Hot chocolate affogato


IOTWIFTGIF -- It's only Thursday, wait, it's Friday! Thank goodness it's Friday!

I love utterly ridiculous abbreviations, don't you?  Especially considering that abbreviations are meant to save time, not require more to explain them.  Meh.  I'm not too concerned about it.

Just like I'm not too concerned about the fact that I've had no idea what day it has been all week.  With the holiday on Monday and getting back to my healthy self, this week has zipped right past me... and that's a good thing.  Hello, Friday!  Greetings, weekend! :)

I'm planning (for once, I use the word loosely) on making up for last weekend's couch marathon and doing oodles and oodles of fun things because I simply want to.  Those are the best kinds of fun things, right?  On tap so far: baking a cake, ordering pizza, watching two Penguins hockey games, a dinner and movie date with Matt, and maybe even a trip to the Strip District for play food shopping.  Play food shopping means I take no list with me -- watch out, world, there's a rebel on the loose!

While I'm aiming to be out of the apartment for much of the weekend, I'm surely going to make time for a quick dessert at home.  When I say quick, I should be saying lightning fast.  Two ingredients and about two minutes from start to slurping.

Have you heard of it?  I define reshopping as the phenomenon that takes place when one returns home from a shopping trip and unpacks the bags of new goodies.  Depending on how long the trip lasted, you may discover items you'd forgotten about by the end of the day.  You'll be all "Yessssssssssss!  I'm so glad I got [insert items here]!"

One look at my counter, and I was all, "Eww... there's nothing fun in there."  Then, after some thought, I was all, "Well, that's a lot of food, and it's really healthy."

But wait!  There was one more bag.  What could be in it?

...or just make your order a little more abbreviated.  But really, who on earth would do just a sane thing like that? :)  Someone recently went to Cold Stone Creamery -- you know, the ice cream shop known for outrageous creations and a sea of various toppings -- and ordered a creation with every single add-in in store.

Whew!  Just typing all of that worked up an appetite (wishful thinking, perhaps?).   And I bet you're wondering what the grand total for that mess creation was.  If you guessed $28.90, you're correct!  That's right.  $0.69 per topping, people.  Insane!!


I was lucky enough to be treated to some Cold Stone as a belated birthday celebration this weekend.  I ordered the apple pie creation -- yum!  Graham crackers, apple pie filling, caramel sauce, and cinnamon ice cream.  Toooootally hit the spot.

Being that it's National Ice Cream month for a few more days, I must ask this question -- what is your favorite topping or mix-in for ice cream?  Mine has gotta be rainbow sprinkles, though a giant blob of peanut butter is a close second.

    Frozen banana custard (one ingredient dessert!)


    Go ahead, call me a hypocrite for what I'm about to admit: this week I'm on a self-imposed sugar/junk food detox.  After this past weekend of miniature cakes, excess frosting, and a self-serve candy bar (just to name a few), I felt like I needed to hit the reset button.  Let me be clear -- this is not about calories or dieting or anything obscene like that.  It's just that reaching for the Nutella and ice cream upon waking up, after every meal and as soon as I get home from the gym made me think that my appetite was a little unbalanced.  I'm pretty sure the last time I went 4 days without dessert, cookies, anything sweet, even a piece of chocolate, was 1999.  I remember it like it as yesterday... because it was AWFUL.

    For some ridiculous reason, I decided that I would a) give up something for Lent, even though I'm Presbyterian and we just don't do that, and b) choose to give up "junk food" of all kinds.  That included sweets, chips, pizza, crackers... leave it to the type A personality to be detailed and thorough.  So many of my friends in junior high were Catholic (roughly 98%), and I thought it would be fun to partake in my own little willpower experiment since it meant nothing more serious to me than that.  It's safe to say that I suffered some sort of brain damage prior to that decision, especially given that Girl Scout Cookies are delivered during the Lenten season every year.  Anyway, I completed my challenge successfully, only to go on an all-junk food diet for the week after just to right the universe.  I don't recommend this to anyone, ever.  Case closed.

    I decided this week (read: 5 whole days) I needed a little break... keeping in mind that we're approaching a holiday weekend when I can reassert my place in the world as a food aficionado.  So I wanted dessert last night... what to do, what to do.  Then I remembered seeing a few online mentions of frozen banana custard.  That required one ingredient.  One. Ingredient.  Shut. Up!

    This "custard" is cold and creamy and sweet and healthy!  Of course, when I make it again, I might try adding a few chocolate chips or spoonful of peanut butter or Nutella to the mix.  But know that this was delightfully refreshing and satisfying all on its own.  Seriously, how have I not known about this until now?  And hey, this week isn't going as badly as I remember the first round many years ago... but that doesn't mean this will become a regular event.


    One Ingredient Frozen Banana Custard
    -makes about 1 cup

    1 peeled banana, sliced into pieces, frozen in a sealed plastic bag

    Add banana to bowl of mini food processor.  Start blending.  The contents will progress from slices...to tiny Dippin' Dot sized bits...to smooth banana custard in a few minutes.  Dish out and enjoy!

    Coconut cookie ice cream sandwiches


    After yesterday's healthy post, my brain/body instantly rebelled  -- I ate the entire emergency Three Muskateers bar that I had stashed in my desk even when I had a delicious lunch of a meatloafette, Old Bay roasted sweet potatoes, and broccoli.  So much for trying to eat a filling lunch so I wouldn't be hungry later.  Next time I'll just skip a more culinarily-impressive lunch in favor of the candy bar, thankyouverymuch.  And yes yes, more sweet things on here.  I promise.

    Speaking of more culinarily-impressive foods, one of my New Year's resolutions is to start working through the mountain of recipes I've copied, torn out, or bookmarked for later use but haven't looked at since that time.  Because I'm constantly exposing myself to food, I get a bad case of shiny object syndrome and jump from one recipe to another.  I am going to do my best to balance the library of recipes waiting with those that catch my attention in the future.  [insert fanfare of sorts here]

    Last winter, I often had friends visit to watch Penguins hockey games.  Sometimes I'd have cookies or another treat freshly made, others not so much.  I needed something that would store for long periods of time and be ready at a moment's notice in case the gym was a liiiiiiiittle more crowded than I expected.  Ice cream sandwiches!  A batch of thin and crispy chocolate chip cookies with vanilla ice cream sandwiched between the two.  Wrap each individually and store in a freezer bag until one is desired.  Easy as that. 

    So, when I saw this recipe for coconut cookie ice cream sandwiches, I had to try it.  Easy shortbread-like cookie with ice cream.  The cookies have an awesome crunch to them, just out of the oven or even after being stored in the freezer with ice cream.  If you don't need them to store for a long period of time or want them to be stored at room temperature, try filling with Nutella (I did and it was friggin' amazing).  Done and done.


    Coconut Cookie Ice Cream Sandwiches

    -makes 12 sandwiches... unless you eat two fresh out of the oven, and another two with Nutella

    1 stick unsalted butter, room temperature
    1/2 cup granulated sugar
    1/4 teaspoon salt
    3/4 cup all-purpose flour, spooned and leveled
    2 2/3 cups sweetened shredded coconut, loosely packed
    Vanilla ice cream, slightly softened

    In the bowl of an electric mixer, beat butter, sugar, and salt until smooth. 

    Mix in flour, then coconut, beating until a dough forms. Transfer to a piece of waxed paper; pat into a rectangular log, about 3 inches wide and 6 inches long. Wrap with waxed or parchment paper; freeze until firm, about 30 minutes.

    Preheat oven to 350 degrees, with racks in upper and lower thirds.  Line baking sheets with parchment paper.  With a serrated knife, slice log of dough crosswise 1/4 inch thick, you should get about 24 cookies.  To make it easier, cut first log in half, then half again and work from there.  Arrange slices on two baking sheets.

    Bake until golden, rotating sheets from top to bottom and front to back halfway through, about 20 minutes.  Watch these very closely toward the end to avoid any excessive browning or even burning.  (I actually took three cookies that were on the outside edges of the cookie sheets off and put them onto the cooling rack while letting the rest bake for an additional minute or two. )  Allow sheets to cool on rack for two minutes, then carefully remove paper or cookies to rack to cool completely.

    Dividing evenly, spread ice cream on flat side of half the cookies; sandwich with remaining cookies, flat side down. Freeze on a baking sheet until firm, about 3 hours.

    Wrap each sandwich individually and store in freezer bag.  Enjoy whenever you are in the mood for an ice cream sandwich.  For me, it's often when I've walked in the door from the gym.  Yum!
