Easy 5-ingredient chocolate graham cracker toffee


Christmas is in two days.  Christmasisintwodays!

Two.days.

I was all set to write a real, borderline-wordy (aka typical) blog about this toffee.  Toffee that I planned to make two weeks ago.  Had I done that and posted it shortly thereafter, you could've made it and included it in your tins of Christmas cookies to family and friends.

However, not surprisingly, I did not make said toffee two weeks ago.  Or even two days ago.  I made it last night.

Gulp.

But it was so easy and so delicious that I couldn't forgive myself if I didn't at least steer you in the right direction to get the (very easy) recipe for yourself so you could wait until the last minute to make toffee, too.

Last minute homemade toffee is better than no toffee at all, right?

68 Christmas & holiday cookie recipes

As of Saturday, the fall/Halloween/Thanksgiving decorations are packed away until next year.  By last night, the Christmas decorations were up and the tree was trimmed.  And tonight?  Tonight, Official Holiday Baking Season begins!

Last week, while helping my mom bake pies for Thanksgiving, we started talking about cookies.  We fantasized about all of the cookies we plan to bake this year: both old favorites and new recipes that have caught our eye throughout the year.  And then how we'd enjoy them: eating, mailing, sharing, exchanging, you name it.  Is there anything more fun than cookies to make?  No, sir!

Food is love, and what better way to spread love than to gift cookies and treats to those near and dear to you!  Whether you're planning to bake cookies for everyone on your nice list or simply make enough to take to a holiday party, there's something for variety of sweet tooth here.

Friday Five: New (to me) things I'm loving

TGIFOATDW - Thank goodness it's Friday... of a three day weekend!  I always rant say that I'm not yet ready for a day off when MLK Jr. Day rolls around because it's so soon after the holiday break.  And that I'd much rather have Presidents' Day off in February.  That being said, um, hallelujah for MLK Jr. day off! 

Three cheers for the extra time because there is so much I want to do this weekend, rather than so much I must do, and the list involves a little bit of everything.  In the sports column, there's a Pitt men's basketball game against Syracuse on Saturday and the Quarterback Bowl AFC Championship game on Sunday.  Regarding the latter, I have this feeling the hype is way bigger than it will be for the Super Bowl.  In the food column, Matt and I are dining at a new-to-us restaurant called Matteo's as part of Pittsburgh Restaurant Week.  The menu looks incredible, so here's hoping we leave satisfied!  And the miscellaneous fun column may include a trip to the mall (holiday weekend sales, what what!), a massage (treat yo'self!), and trampolining.  Yep, trampolining.  TBD.  Say a prayer, please ;)

I told you about two new-to-me discoveries that have brought me such joy: the flat whisk and Cooks' Illustrated.  I thought I'd share a few more things I've started enjoying in the new year that you might get a kick out of, too.  Here is today's Friday Five: New (to me) things I'm loving!

1. YurBuds - I do not like change, especially when it comes to my workout essentials.  I've used the same kind of headphones (but multiple pairs) for over 10 years.  When my most recent pair played its final tune (and no longer worked with the power of rubberbands and tape), I discovered that my kind is no longer made.  After some serious research, I chose YurBuds ear buds since they got the best reviews from athletes.  My sister-in-law gifted me this pair at Christmas, and I've been using them nonstop since then.  They are truly no-slip and stay in place like a champ.  I highly recommend these!

2. Fancy Sunday brunch - Matt and I have a thing for making brunch in the comfort of our own home (and pajamas) and rarely go out for it.  For months, we've talked with friends about going out to at any of the more upscale restaurants around the city; this past weekend, we finally made it happen.  Turns out that getting dressed up and having someone else prepare your brunch is totally amazing!  We visited Savoy (in the Strip District, for you locals) and had a fantastic time.  My shrimp & grits was to die for, loaded with spicy andouille sausage, cheddar cheese, and mushrooms.  Yum!  Can't wait to see where we're headed next.

Friday Five: Cookbooks to gift

(Obligatory reminder of how many days are left before Christmas and onset of self-induced panic after looking at one's ever-growing to-do list.)

Ha-appy Friday, everyone!  Hope you're having a great week and taking time to enjoy the special moments of the holiday season, however big or small they may be.  The brief 5 minute bursts of hanging ornaments (does your tree take days to decorate like ours?) or Christmas episodes of your favorite TV shows are just as important as the lavish parties and gift exchanges.  Any time together with people you love is time well spent, right?

All of that being said, I take special pride in being a really good gift giver and want to spoil those on my list with things they'll really enjoy.  There are few better things than seeing someone's face light up when they receive a surprise they love, right?

I won't pretend to have all the answers to your shopping and gifting conundrums, but I will offer up a few more suggestions for the food-minded person on your list.  Whether he/she is a rookie or an expert, these cookbooks are some of my favorites, new and old, and are for real people who cook real food.

This Friday Five is all about good resources for good recipes and great food.  Bon appetit! 


1. Martha Stewart Baking Handbook - The owner and head baker of a local bakery recommended this book to me years ago.  When I asked him about going to culinary/pastry school, he told me to save my money and bake my way through this book because it would teach me "everything a baker needs to know."  Best advice to date!  If I could only recommend one book to an aspiring baker, this would be it.

2. Barefoot Contessa Foolproof - My love for Ina knows no bounds, and her latest offering only confirms my adoration.  Reliable recipes, satisfying meals, and easy entertaining are the hallmarks of Ina's food philosophy.  I especially love her tips for planning a party, down to a table layout and timeline leading up to the meal.  Lists are a host's best friend!

3. The America's Test Kitchen Cooking School Cookbook - Like Martha's book, if I could only recommend one book to an aspiring cook, this would be it.  America's Test Kitchen doesn't assume that the reader knows everything and provides hundreds (maybe thousands?) of helpful photos.  Recipes for all skill levels and appetites.

4. Michael Symon's 5 in 5 - I once thought Chef Symon was only capable of making fancy and complex dishes from watching him on Iron Chef, but learned his cooking can also be incredibly approachable and downright easy.  He's one of my newest food crushes, thanks to his new show The Chew.  This book has been a savior for weeknight dinners in our home!

5. The Pioneer Woman Cooks: A Year of Holidays - If Martha is the queen mother and Ina the queen, Ree is absolutely the princess in cowboy boots, new to the royal food court.  I'm a regular reader of her blog and can't get enough of her show on Food Network.  I think the reason she's become so successful is because she cooks what we really want to eat!  Hearty dishes that can feed a small family or a big crowd come together with helpful shortcuts and her signature wit.  Summary: I love this book so!

Bonus: Cookbook holder - Matt got this for me a few years ago, and I can't tell you how useful it is.  Keeps cookbooks open and protects them from flying batter and sizzling oil!

If I had to sum up how autumn affects the food community, I'd use this picture:

People, myself included, go cah-razy for pumpkin.  Sweet recipes, savory recipes, no-bake recipes, epic recipes. 

Before the baking and cooking frenzy begins in my kitchen, there's one thing I absolutely must have to whet my appetite: pumpkin butter.

Friday five: February fun edition

Happy February, loves!  After saying, "This month just flew by!" for the past few months, January seemed to take it's time, and that was just fine with me.  It's been nice to slow down, take a look around, and enjoy the snowy winter we're having so far.  I know not everyone loves snow nearly as much as I do, but I would bet that everybody enjoys cuddling up inside with thick fuzzy socks, a mug of hot chocolate, and a a great DVD.  Cozy and happy weekends are the best!

With January in the books, some folks seem to start feeling a little stir crazy in February.  I'm here to banish those feelings with things you can plan and look forward to in the next few weeks.  Fun things on the calendar always make me happy and giddy with anticipation!

Here's this week's Friday five: upcoming fun things in February!


1. Fat Tuesday & Mardi Gras celebrations - Fat Tuesday falls on February 12th this year.  NOLA is #1 on my list of cities to visit, but I think I'd rather pick another time to visit the famous city.  That being said, I'm not going to let geography keep me from celebrating this year!  I'm planning to take a crack at making a quintessential southern dinner -- red beans and rice -- using the slow cooker.  Any other, PG-rated ideas for how to celebrate?

2. The Happiness Project -- I've been making a conscious effort to read more because, as it turns out, I enjoy it!  Plus, having something besides Scripture to read in the evening before bed really helps my mind "power down" and makes sleep more satisfying.  I've heard good things about this book for a while and moved it to the top of my must-read list after I finished my most recent book club selection (bizarre, in case you're wondering).  A long distance friend and I have decided to read this "together", and I'm really looking forward to sharing the experience with her!

Homemade marshmallows


What would you do if you were sequestered at home, sick with the "death flu" as my pharmacist friend has been calling it, for days with nothing to do?

Make marshmallows, of course!

That's what I did, anyway.

What?  Don't give me that look.  I had to do something.  I was losing my mind!  I hadn't left our apartment in 72 hours and hadn't talked for almost the same amount of time thanks to coughing fits and the loss of my voice.  I felt useless.  I just wanted to create something... have something to show for my long holiday weekend.


Thankfully, the death flu had no effect on my stomach, so my appetite was relatively undisturbed.  At first thought, I wanted to make chocolate cupcakes.  I'd halve, no, quarter the original recipe because surely only one person would enjoy the products of my flu-ridden baking adventures.  There was no way anyone I loved or loathed would get germy cupcakes.  Those would be all mine... in one sitting.  But, that's just what changed my cupcake tune.

Fast Friday: Homemade hot cocoa mix


It's here!  It's finally here!  Light up night in downtown Pittsburgh!  I'll be doing my happy holiday shuffle (and using superfluous exclamation points) all day long.

As much as I try to contain my excitement and enforce self-imposed rules that forbid Christmas music or decorations until after Thanksgiving, it becomes a serious uphill battle once this annual city tradition takes place.

It's just the celebration you'd expect, filled with lights, Santa(s), caroling, gingerbread house displays, Macy's windows, fake snow, and fireworks...!  The downtown streets are void of traffic and, instead, overflowing with Pittsburghers ready to begin the holiday season.  It's just so darn delightful and merry!

I look forward to light up night every year and imagine myself among the bustling crowds, enjoying fried Oreos and sipping on hot chocolate.  I can practically taste it when we arrive in Market Square, which is when reality promptly smacks me across the face.

Great sea of humanity!  There is no way I'm waiting 30 minutes in line for hot chocolate from Dunkin' Donuts or Starbucks.  And I'm certainly not going to pay $5 for a tiny styrofoam cup filled with watery hot chocolate made from a cheap packet.  If being a hot chocolate snob is wrong, then I don't want to be right!

Leafy monogram letter autumn door decoration

...to jump at the chance to employ ridiculous seasonal puns :)  But seriously, just wait until you see this super easy craft project.  It'll have you falling for autumn, too.

It seems like I always get the crafting itch around this time of year.  After three straight months of using all my brainpower to decide between ice cream and frozen yogurt, I'm ready for a new Sunday afternoon ritual.  Sipping a mug of hot chocolate.  Planting myself on the living room floor in front of me while watching Sunday football.  A large pot of soup simmering away on the stovetop.  All while working on a creative project.  Fall perfection, I'm telling you!

 

Those oversized bins of brightly-colored faux gourds and straw garlands in front of the local Michael's and JoAnn Fabrics stores seem like they're calling my name.  Since I still have the pumpkin wreath I made two years ago, I bypassed those bins and went straight for the fake leaves.  I spotted an easy monogram project on (where else?) Pinterest a few weeks ago and have been itching to get to work.

Here's what you'll need (and all for under $10 if you already have the glue gun):
  • large wooden or paper mache letter
  • silk leaves of various colors
  • hot glue gun & glue sticks
  • twine or ribbon, for hanging

Attention Pittsburgh locals and past, present, and future visitors to this glorious city!

You may or may not have noticed that, in recent years, the 'burgh has become quite a magnet for cooks and cuisines of all backgrounds.  I don't think I'm the only person here who is happy ecstatic to see the city shake its culinary reputation of being the place where Primanti's is located.  The sandwiches with fries and coleslaw have their place in Pittsburgh culinary history, but there are so many more options these days that beg to be explored.

12 days of cookies: Day 12 - Chewy chocolate chip

On the 12th day of cookies, my oven baked for me... the best chocolate chip cook-ieeeeee!  And, O.M.G., the best damn dough ever.  Raw eggs, you don't scare me :)


Listen, I know we're all very comfortable with the classic Toll House recipe, and it's certainly a worthy one.  But have you ever just wanted a little more out of the quintessential cookie?  A few years ago, encouraged by my then-boyfriend (now husband... so cah-razy!), I went on a search to find a recipe for super chewy chocolate chip cookies.  You know, similar in texture to the Keebler Soft Batch cookies but with less chemicals and more home-cooked flavor.

Friday five

Things I'm totally loving right now and/or can't wait to get my hands on as soon as possible. 

1. Panera's garden vegetable soup with pesto.  Warm and so satisfying.  Matt and I have a Saturday full of errands planned and have already picked this for our lunch spot... because it's delicious and also because we have a coupon for buy one you pick two, get one free!

2. This metallic cardigan from Banana Republic.  Chunky but still feminine.  Cozy.  Sparkly.  And bearing pockets!  Could this sweater be any more perfect for the holidays?  "Could I BE wearing any more clothes?"


Never gets old, I swear.

Visiting Georgetown Cupcakes + mini Monday

Take that, Monday morning!  Did you think you were going to catch me off guard and groggy?  No way!  A very fun and relaxing weekend revived me and made getting up this morning (to exercise, even!) much easier than I would've guessed.  Our DC hosts were fabulous and made us feel right at home!

While we spent most of the weekend lounging and enjoying the good great company, we did make a day trip to Georgetown on Saturday, where we strolled, shopped, ate, and frequented a cupcake shop you may have heard of: Georgetown Cupcakes.  It's kind of a big deal.

Need further proof?  Here was the line to buy cupcakes.


Truth be told, it really wasn't bad at all since we were in the shade.  From standing in line to cradling our cupcakes, it was just under 30 minutes.  And, honestly, I spent most of that time contemplating my order.  So many choices, 18 total for Saturday alone!

 


Okay, so planning our orders and partaking in an quick glamour shots session as well.  No big deal :)  Once inside, there were no sightings of the owners, Katherine and Sophie, but these cupcake purveyors were mighty friendly and efficient.


Anyway, I'll get to the bottom line.  Was the wait worth it?  Did these individual petite cakes live up to the hype?

What do cupcakes and laser guns have in common?

Any idea what the answer is?  My Friday!  And, a very happy Friday to you!  Let's get around to the Friday five... I'm really enjoying this little ritual, and I hope you are, too.

1. I've got the day off thanks to working last Saturday.  I'm beginning to realize that having a weekday off is so incredibly convenient, especially when it comes to planning a wedding.  So many vendors are busy on the weekends with other weddings, so weekdays are prime meeting times.  Win win!

2. Matt and I are headed to the mall to take a crack at our gift registries.  That's right, it's time for the famous laser scanner gun!  (Ten bucks that Matt will be manning this weapon of financial destruction...)  I have high hopes for this adventure, but after talking with friends who've gone before us, this is to be considered a work in progress.  As always, I've done a little research and jotted a few things down so we don't let some all-too-eager sales associate convince us that we need seven kinds of glasses or 18 place settings of fine china.  If you have any tips from your experiences, I welcome them graciously!

Summer reading

Feeling good and energetic today!  I'll chalk it up to my morning jog -- nothing like looking at the clock at 6:30 and knowing you've already squeezed in a half hour workout.  Helloooooooo, summer!  Barely two days into the season of vacations, and my reading list is already five books deep.  On it so far, we have:

1. I Like You: Hospitality Under the Influence, by Amy Sedaris - one of my best friends gave me this as an early birthday gift recently and I can't stop reading it/laughing out loud hysterically.  In fact, I laughed reading the book jacket, where this advice was given: "Put loose marbles in your medicine cabinet to alert you to any nosy guests."  I love this book because it's not a typical cover-to-cover read, but rather a pick-it-up-wherever-you-like kind of book that has made itself at home on my coffee table.  Since this was such a success, Sedaris came out with another book entitled, "Simple Times: Crafts for Poor People." 

2. The Book Thief, by Markus Zusak - the current pick for my office's book club.  It's gotten fantastic reviews, so I have high hopes for it.

3. Mansfield Park, by Jane Austen - though I'm not a passionate Jane Austen fan, I do enjoy the stories (and movie adaptations of them, hello Pride and Prejudice).  My mom and I watched a little of the movie version of this on Saturday, and I'm hooked.

4. Harry Potter and the Deathly Hallows, by J. K. Rowling - this is a reread, hopefully to be finished before July 15th when the final movie arrives in theaters.  I usually try to avoid reading the book  too close to seeing the movie because I spend the better part of the film thinking, "But they left this part out!  And that detail, too.  How could they?  Pfffffff!"  However, this is the end of the whole Harry Potter series, so I'm throwing caution to the wind and breaking all the rules :)  Last night I logged a good 50 pages before I started dozing off.

Nooooooothing compares, nothing compares to you...


I'm talking about chocolate!  Sweet, sometimes bitter, smooth, plain or filled with surprises, glorious chocolate.  After an absolutely dynamite office lunch from Coca Cafe (I recommend the ham and brie on pretzel bread) yesterday courtesy of the bosses, almost everyone enjoyed a brownie for dessert.  Me?  Not so much.  Instead, I wrapped one up to take home and store until Saturday.  I was so proud of myself for resisting temptation!  A pat on the back was deserved before I returned to work. 

As the rest of the day went on, all I could think about was having a little morsel of something sweet.  Anything.  Maybe a few grapes would quell the craving.  (Spoiler alert: They did not.)  Drank an extra glass of water thinking maybe I could trick my brain into thinking I was simply thirsty and no longer needed sugar.  A grueling sweaty workout would surely distract me long enough to send me home craving real foods.  I just had to make a quick stop at CVS to pick up Ziploc bags... and I came away with all of this:

Easy peanut butter fudge


I love a good story.  And, especially around the holidays, it seems there is no shortage of them.  For example, I have a great one about how Matt and I became engaged to be married this Christmas!... but I'll save that for later.  For now, this is the story of how the best recipe for peanut butter fudge came into my life.  Oh, and yes, I am well aware that teasing you like that is just awful :)

Year after year, at my favorite family Christmas party, the caterer plates up the most delectable fudge I've ever had.  It's the stuff of legend.  The only item on the buffet, aside from the shrimp, that needs to be replenished constantly.  And anyone who is familiar with the holiday party circuit knows that the cocktail shrimp disappear fast.

The universal gift + early gifts!


Who out there is still stumped about what to get a certain person on your list?  Don't worry, you've still got some time... 4 days to be exact.  The trickiest people on my list are Matt's parents.  I love them dearly, but their interests don't exactly translate well into things I can present to them at Christmas.  They are both die-hard Phillies and Jimmy Buffett fans, and tickets for a game or concert won't go on sale for months.  What to do, what to do...

Since I can't be with them Christmas morning, I really wanted to give something the entire family can enjoy, Matt, his brother and sister included.  That's 5 people to please with one gift.  Talk about a tall order!  Matt has said that Christmas day is always hectic for his family, waking around 8, opening gifts, and driving to and from multiple relatives' houses until late at night.  Attention Matt's family -- stop reading now, please :)

Stocking-sized kitchenware

It's already Wednesday, nice!  And, today is going to be an abbreviated work day since our office holiday party is this afternoon -- it's a potluck lunch at the boss's house.  To some, the word "potluck" conjures up bad memories of tasteless cookies and mystery casseroles.  To the talented foodies in my office, it's a chance to show off your kitchen skills and try some new recipes!  We munch, chat, and marvel at the gorgeous decorations in the house, too.  Always so put together and cozy -- roaring fires in the fireplaces, oversized ornaments hanging from the banister, and trees trimmed to the nines.

Speaking of trees, is your Christmas tree still looking a little naked?  Or are you in need of a stocking stuff for a food enthusiast?  Check out these adorable ornaments that I spotted over the weekend.

While I'm generally against giving Christmas items as gifts for said holiday, these can totally be used year round to hang around the kitchen.  Also a great decoration for gift wrap, tied with some twine or ribbon.  And they're miniature, by golly...!

Do you stuff stockings?  If so, what goes in them?  When do you open them?

We always open stocking gifts first -- usually items like specialty candy, a new ornament, book, or stickers and art supplies when we were little young.
